Batter-bowl-lickin’ good

Justine Gelevan | The Good Girl

I have a great brownie recipe for you today. I’m told this is a variation of Katharine Hepburn’s brownie recipe. I didn’t know she had a personal recipe, but I will tell you that these brownies are amazing, so it makes sense that it’s a popular recipe.

The only difference between this recipe and hers is that I’ve used pecans instead of walnuts (I also put a few less) and I’ve added chocolate chips to kick the richness factor up a notch.

I served these brownies warm with a heaping scoop of ice cream on top. Delicious.

These would be great for any occasion. They are relatively easy to put together and only require a medium sized sauce pan – so low on dishes too!

Try them this week to find out how good they are for yourself!

Best Fudgy Brownies

Recipe adapted from Tasty Eats at Home

½ cup butter

2 oz. unsweetened chocolate

1 cup sugar

2 eggs, beaten

½ teaspoon vanilla extract

½ cup chopped pecans (more or less as you like it)

½ cup semi-sweet chocolate chips (PC Decadence is my choice)

¼ cup all-purpose flour

¼ teaspoon kosher salt

Heat oven to 325 degrees and prepare an 8” X 8” or 9”x9” baking pan by greasing it or spraying with cooking spray. Optional: Line the pan with parchment paper, grease the paper. Set aside.

In a medium sized sauce pan, melt the butter and the chocolate together over low heat, stirring constantly with a wooden spoon. Take the pan off the heat and stir in the sugar. Beat eggs and vanilla separately in a small bowl and then add to mixture to make a smooth batter. Add the nuts, chocolate chips, flour and salt, and stir until incorporated. Pour the batter into the baking pan and spread evenly. Bake until a toothpick inserted into the center comes out clean, 40-45 minutes. Let cool on a rack. Cut and serve.

Tip: If you want clean edges that don’t crumble too much then make sure you let the brownies cool completely. The cooler they are, the cleaner edges you’ll get when cutting with a sharp knife. Of course, if you don’t care how crumbly your brownies are, then dig right in!
