Recently, a colleague was telling me that her kids always ask for homemade ice cream cakes as their birthday cakes and how they’re so easy to put together and customize.
I decided to try this for a family birthday I had coming up, knowing they liked ice cream cakes and usually bought them for birthdays anyway — a great way to test this on an audience.
The great thing about a homemade ice cream cake is that you can choose whatever you want for every layer of the cake, from crust options to candy decorations. It can be a new cake every time!
For this birthday, I decided to try a peanut butter themed cake with a peanut butter cookie crust, peanut butter cups in the ice cream, peanut butter filling and Reese pieces.
What a success — so easy, just as promised and every last slice was gone when I left that night.
Try this for your next cake occasion or just because, you’ll love it because you’ll get to make it however you like!
Steps to making your homemade ice cream cake
1. Select your choice of crust — oreo crumbs, graham cracker crumbs, a cookie bottom, a brownie bottom — the options are endless!
2. Press the crust into the bottom of a spring form pan and bake or don’t bake depending on the direction of the crust you chose.
3. Once crust is set, cover it with a thin layer of a sauce, caramel, chocolate etc.
4. Select your ice cream and let it sit on the counter about 5 minutes to make sure you can spread it — don’t let it get too runny. Use a spatula to spread about 4-5 large scoops over the crust. Until about half way up the side of the pan’s edges.
5. Cover the ice cream with another layer or sauce and then cover with candy or fruit of your choice. If you want a filling, spread that on here.
6. Spread another 4 large scoops of ice cream over the filling to reach the top of the spring form pan edges.
7. Decorate with more candy, sauce and whatever you like.
8. Freeze at least overnight.
